White’s Smoked Salmon & Feta Pasta

Serves 4


500 Grams Thin Spaghetti
200 Grams of Feta Cheese
1 Tbsp Extra Virgin Olive Oil
3 Spring Onions
1 Bunch Fresh Basil Leaves
Juice of 1 Lemon or Lime
1 Cup Smoked Salmon Pieces
Salt and Pepper


Cook pasta in boiling salted water until al dente and drain.
Reserving 1 cup of cooking water. Cut four thin slices of feta
reserve for garnish, crumble the rest. Heat oil and saute spring
onions until just softened. Add pasta, reserved water, crumbled
feta, basil and toss until heated through. Add lemon or lime juice
to taste. Place on serving plates and top with smoked salmon
strips and reserved feta. Sprinkle with pepper then serve.
