Sea Perch – also commonly known as Orange Roughy – is a mild flavoured fish in season throughout the cooler months of the year.
It is wild-caught off the shores of Tasmania, and is great for simple pan-frying or baking.
The Orange Roughy has a bright red and prehistoric appearance. It is not suitable for use as a whole fish due to the makeup of its insides, however it’s wonderful pure white flesh will be among the most appetising items in any fishmonger’s cabinet!
The freshest fillets will have a beautiful orange hue running through the underside and will come with skin and bones removed.
