Snapper Season – Port Phillip Bay Geelong

Snapper in Port Phillip Bay are caught all year round.

They are more prolific in the warmer months. Traditionally the snapper season will begin in October and continue for the next six months.

These fish migrate into the bay, where they will spawn at various stages throughout the season. Once the colder months begin in June, most of the aggregation of the fish will leave Port Phillip Bay.

Our fishermen use a long-line consisting of 400 hundred hooks. The long-line can be set at any time of the day, however the best times are during dawn & dusk.

Our fishermen take pride in achieving premium quality snapper using the ikejime method. This involves spiking the brain once landed, which causes immediate death. After spiking, the fish go directly into an ice slurry. This maximizes the quality of the flesh, whether it is then cooked or used for sashimi.
