Our New Zealand King Salmon – also known as Chinook salmon is sustainably ocean-farmed in the pristine waters of Big Glory Bay, located at the very bottom of New Zealand. The bay waters are at a cool temperature of around 14 degrees. This slows the Salmon growth giving it time to develop it’s rich smooth flavour.
Fish farming is a form of aquaculture. It is the commercial production of breeding, rearing, and harvesting aquatic species. It is the only salmon species farmed in New Zealand, which is the largest producer of King Salmon in the world with over 30 years of experience.
New Zealand King Salmon is the largest of the Pacific salmon. The average size can be up to 4.5 kilograms. This unique fish has the highest oil content out of all the salmon species.
The King Salmon is known for it’s exceptional quality and taste. This species comes with so many health benefits such as a high quantity of protein, omega 3’s, and vitamins A & B12. Each of these compounds helps support heart health, brain development, and joint mobility.
There are many ways to prepare and cook this nutritional, delicate fish. The best options we have found at White Fisheries are to bake, grill on the barbeque, or simply slice thin for sashimi. It is known for King Salmon to be the “wagyu beef of the ocean”.
