White’s King George Whiting

Serves 4

Ingredients

8 Single Fillets of Whiting
200 Grams Crab Meat
1 Egg
1/2 Cup Spring Onions chopped
Vegetable Oil
1 Tsp Dijon Mustard
Tooth Picks

Method

Mix together egg, crab meat, mustard and spring onion. Spread an even layer of crab mixture over whiting fillets. Roll up whiting and secure with a sharp tooth pick. Deep fry or shallow fry in a pan with 1/2 inch of oil and cook on a medium/high heat for 3 minutes each side. Serve with garden salad.

Note: Whiting can also be coated with bread crumbs which will
hold mixture together.
