White’s Salt And Pepper Calamari
500g Calamari Tubes
1 pkt Kook A Krumb Salt & Pepper Mix
2 Tbsp Olive Oil
I Cup Corn Kernels
2 Lge Corn Tortillas
100g Sour Cream
425g Can Black Beans, rinsed & drained
1 Avocado, sliced
1 Red Onion, thinly sliced
1 Baby Cos, shredded
1/2 Bunch Coriander, chopped
2 Truss Tomatoes, seeds removed and sliced
Lime Wedge to serve
2 Limes to squeeze
Step 1. Pre heat oven to high.
Step 2. Cut calamari into thin rings.
Step 3. Tightly roll up tortillas and slice into 5mm strips, toss to separate, place on baking tray and drizzle with oil, bake till golden and crisp.
Step 4. Heat oil in non stick pan.
Step 5. Toss sliced calamari rings in salt and pepper mix and fry till golden brown.
Step 6. Combine salad ingredients.
Step 7. Place salad topped with calamari onto plate and nish with tortilla strips, dollop of sour cream and lime squeeze.
