Oven roasted Moroccan salmon
2 tbs Olive Oil
2 tbs Moroccan Seasoning
2 tbs Lemon Juice
4 Atlantic Salmon Portions, skin on
2 Lemons, quartered lengthways
1/2 bunch Flat Leaf Parsley
250 grams Hommus or Tzatziki to serve
Step 1. Whisk oil, seasoning and lemon juice until combined. Place salmon
in baking dish and coat both sides. Cover and refrigerate for 30 minutes.
Step 2. Pre heat oven 180 – 200 c, line roasting dish with baking paper,
place salmon skin face down and scatter lemon wedges around..
Step 3. Roast for 12-14 minutes, squeeze juice from roasted lemon wedges,
top with parsley and hommus once served
“note” this dish is lovely served with cous cous, steamed greens or a
seasonal ingredient salad in summer.
