Dukkah crusted salmon with bean salad
2 Wholemeal Pita breads
2 tbs Extra Virgin Olive Oil
1 x 400 grams Four Bean Mix
4 x Radish, thinly sliced
200 grams Cherry Tomatoes halved
2 tbs Dukkah Rub
100 grams Feta, crumbled roughly
1 cup Mint Leaves
4 Skin on Salmon Portions
1 Lemon, zested and juiced
100 grams Baby Rocket
Step 1. Pre heat oven to 180 c place wedges of bread on baking tray, brush
with oil, season, bake turning occasionally until crisp. Set aside to cool.
Step 2. Place bean mix, cherry tomatoes, radish, rocket, feta and mint
in a bowl.
Step 3. Roll salmon in Dukkah until evenly coated.
Step 4. Heat half remaining oil in fry pan, cook salmon for 3 minutes on
each side or until golden. Cover with foil and set aside for 5 minutes to rest.
Step 5. Combine lemon juice, zest and remaining oil and pour over salad
Step 6. Serve salad with bread spikes around plate and top with salmon.
