Green Apple Salad


Salt & Pepper

4 Serve Size Pieces of Dory

2 Medium Green Apples sliced thinly

2 Spring Onion sliced thinly

1/2 Cup Fresh Mint Leaves

1/2 Cup Fresh Coriander Leaves

Juice of 1 Lemon or Lime

1/2 Cup Roasted Unsalted Cashews

Palm Sugar Dressing

90 Grams Palm Sugar

2 Tbsp Fish Sauce

100 Grams Finely Grated Fresh Ginger

2 Tbsp Water

Green Apple Salad

Combine ingredients for palm sugar dressing in a small saucepan.

Bring to the boil. Remove from heat, strain.

Cool to room temperature.

Season fish.

Cook fish on a heated oiled grill plate until golden, turn over and cook until cooked through.

Combine apples, onions, mint, coriander and juice in a bowl.

Pour over half of palm dressing toss until combined.

Divided fish among serving plates top with salad and some cashews then drizzle with remaining dressing.
