For over 30 years White Fisheries has supplied King George Whiting from Port Phillip to many of the leading restaurants and hotels throughout the Bellarine, Geelong areas, across Victoria and indeed Australia.
King George Whiting is a fish that is caught all year round both commercially and recreationally. Our fisherman predominantly fish areas from St. Leonards to Clifton Springs. They use a beach seine net that will cover an area approximately 500 metres to 750 metres from the shore. This occurs in around 5-6 metres of water, mostly at night when the fish move in closer to shore. The catch is sorted in waist deep water allowing the bycatch to be freed alive and the whiting are scooped into an ice slurry to ensure premium quality. Our whiting are caught, delivered and prepared for our shop within 6 hours of being in the water ready for our customers.
By catch (non targeted species) from whiting fishing can be calamari, red mullet, flounder, flathead, tommy ruff, Australian salmon, garfish just to name a few. Other species such as stingrays, banjo sharks and undersized fish are safely released back into the bay.
King George Whiting is considered victoria’s premium table fish due to its distinct flavour and delicate texture. Whiting can be cooked in many different ways. It cooks up very quickly and can be grilled, crumbed, battered or even done in the oven.
