White’s Salt and Pepper Silver’s


2 packets Silver Whiting Fillets
8 Small Corn Tortillas
1 Kook A Krumb Salt & Pepper Mix
2 Corn Cobs, husk & silks removed
1 Avocado, stoned, peeled & diced
2 Cos Lettuce, finely shredded
1 Red Onion, finely chopped
1/2 Bunch Coriander, chopped
1 Long Red Chilli, chopped
2 Limes, juice squeezed
1 Clove Garlic, crushed
1 Tbsp Olive Oil


Step 1. Pre heat oven to 200c, line baking tray with baking paper.
Place tortillas on lined tray, spray with olive oil, bake for 6-8 minutes
until crisp.
Step 2. Combine fish with salt and pepper mix in bowl.
Step 3. Heat a frying pan over high heat, spray corn with oil, cook
turning occasionally, for 8 minutes or until tender and charred.
Step 4. Use sharp knife to remove corn kernels, place in bowl with
avocado, onion, coriander, chilli and 1/4 of lime juice.
Step 5. Heat oil in frying pan over medium heat. Add silver whiting
fillets turning once golden.
Step 6. Combine mayonnaise, lime juice and garlic.
Step 7. Divide tortillas among serving plates, topping each one evenly
with lettuce, salad mix, whiting and lime mayonnaise.
