Whole Baby Snapper
2 x 450gm Baby Snapper
2 Tablespoon Masterfoods Cajun Spice
1 Teaspoon Corn Flour
2 Teaspoons Lemon Juice
1 Tablespoon Vegetable Oil
Preheat oven to 180 degree c. Score fish on both sides with 2 diagonal cuts & set aside.
Mix all ingredients into a paste & rub over fish. Stand fish upright with the belly side down on a tray with baking paper.
Place in oven and cook 20 minutes.
The snapper can be filled with various stuffing mixtures to enhance the flavour, eg. Tomato & onion, lemon & lime etc.
